Since 1905, the spirit of our ranch has been guided by a simple truth: if you take care of the land, the land will take care of you. That belief has been passed down through six generations, and today, it still fuels everything we do at The Fatted Calf.
We're not just selling beef. We’re carrying on a legacy.
Our cattle are grass-fed from the time they’re weaned, then grain-finished with care to develop bold, rich flavor and tender marbling — the kind that fills your plate with something worth slowing down for. Every animal is raised with respect, without hormones or shortcuts, and processed in small batches, with ground beef coming from a single animal — not a blender full of mystery meat.
We believe honesty is the only way forward. In a world full of noise and false narratives, you can trust that what we say is what we do. We raise every steer like we’re feeding our own family — because we are. And when you buy from us, you’re part of that family too.
One of our favorite reminders of this legacy sits right in our home: a wide, pecan-wood table cut from a tree that stood on the ranch for over 130 years. Once it leaned from years of a boy’s rope swings, and when a storm took it down, we gave it new life as a gathering place. That table, with its slope still visible, holds the weight of meals, memories, and moments that matter — just like the beef we raise today.
